Now that I am working full-time I’m starting to rely on my crock-pot alot!
This is an easy peasy “dump it all in” sort of recipe that is right up my alley now that I don’t have time for faffing around with food, but still want something nutritious for my family.
lots of garlic
lots of a leafy green vege. like kale or silver beat
Chop the vegetables and add:
1 tin of tomatoes
1 cup vegetable stock
1 can chilli beans
a good dash of cajun seasoning
and a good grate of pepper
Let this cook on low for 8 hours.
We ate it with corn chips, grated cheese and sour cream – nice over rice or in taco shells too!
